When we first wake up in the morning my son Jax asks for a snack (cue eye roll), thankfully he considers yogurt a snack. That buys me a little time to throw something together for him. Lately he’s been really into sugary cereals so if I’m not quick enough with a suggestion I’ll get a request for one of those. Don’t get me wrong, I’m ok with him having a ‘kids cereal’ every now and then. I try to keep the “healthier” versions of them in the house and suggest he accompanies them with a Hulk Shake (which he will always say yes to). On most days he’s open to other suggestions, especially if I give him choices. On this morning I asked him if he wanted Spiderman Waffles or Tyrannosaurus Rex French Toast. Fast forward to me sifting through his toy bin for inspiration.
• whole wheat bread
• 4 eggs
• 1 tsp vanilla
• 1/2 tsp cinnamon
• coconut oil
• 1/4 cup milk
• 1 apple (any kind)
Prep time: 5 minutes
Cook time: 15 minutes
Everyone has their own French Toast Recipe, here’s our favorite.
1. Prepare your bread wash, beat eggs, milk, vanilla & cinnamon
2. Dip bread in mixture, coating both sides evenly
3. Coat a small skillet, frying pan or griddle with coconut oil
4. Cook bread slices over a medium heat until browned on both sides
5. At this point set aside to cool off a bit so you don’t burn your fingers
**I slice the apple up at the beginning of the prep so if things start to take longer than expected I have a snack ready that wont spoil his appetite but will tide him over.
Let's Build a Dinosaur
Any time I make food for my son out of french toast I always limit it to 2 pieces of bread. Below shows the pattern I cut into the bread.
Using one of the slices I cut a triangle for the eye and 2 rows of sharp teeth.
Once you have all of your ingredients prepped grab a pretty dish and start plating and adding any last-minute garnishes.
In ours I added a piece of turkey bacon for the dino to stand on and a chocolate chip to his eye.
Voilå, Tyrannosaurus French Toast.
